Tomato, Corn & Black Bean Salad

Tomato, Corn & Black Bean Salad
This easy side salad (or even use as a dip) incorporates the taste of summer in one simple dish.

Ingredients
- 3 ears of corn boiled for 1 minute
- 2 ½ cups black beans drained, rinsed, and cooked
- 8 oz. cherry tomatoes halved
- ½ cup red onion diced
- ½ cup basil leaves chopped
- 3 ½ tablespoons red wine vinegar
- 2 tablespoons olive oil
- 2 cloves garlic minced
- salt & pepper to taste
Instructions
- Slice the corn kernels off the cobs and mix with the beans, sliced tomatoes, and red onions in a large bowl.
- In a small bowl whisk together the basil, vinegar, oil, garlic, salt & pepper.
- Pour the dressing over the salad mixture and gently mix together. Garnish with fresh basil if desired.
