Easy Vegan Ambrosia Salad

This simple vegan salad is easily customized to suit your taste. The combination of fresh fruit, coconut cream and light sweetness make it a festive addition to most any meal.

Ingredients

  • 1 cup red or green seedless grapes, sliced in half lengthwise
  • 1 cup mandarin orange segments, or 15 oz. can mandarin oranges, drained
  • 1½ cup fresh pineapple, chopped
  • 1 cup vegan mini marshmallows
  • 13.5 oz. can full fat unsweetened coconut milk, refrigerated
  • 5 Tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Place a medium-sized mixing bowl in the freezer to chill for 15 minutes.
  2. In a large mixing bowl combine grapes, orange segments, pineapple and marshmallows.
  3. Remove the chilled bowl from the freezer.
  4. Remove the chilled can of coconut milk from the refrigerator and turn it upside down. Open the can from the bottom and carefully pour off the liquid and set it aside. Spoon the coconut cream, which is thick and solid, into the chilled bowl.
  5. Using a hand mixer beat for 1 minute. Then add the powdered sugar and vanilla and continue to mix for another 2 minutes, or until it becomes whipped and fluffy.
  6. Gently fold the whipped coconut cream into the fruit mixture.
  7. Chill for at least 1 hour.

*Substitute ingredients to accommodate your allergies and comfort. Do what works for you to eat safely.


Note: I incorporate the powdered sugar gradually, adjusting as I go to gauge whether the fruit's ripeness calls for more or less sugar. My goal is to achieve a subtle sweetness that complements the natural sugars in the fruit.
