This is so simple and a repeat crowd pleaser. Without a doubt, with fresh ingredients (even in winter!) this app stands out as a great start to a meal. I prefer to prep it the day before -- which enhances the taste AND saves me time the day of :)

Ingredients

  • 6-8 tomatoes, chopped with seeds removed
  • 2 cloves garlic, minced
  • 2 Tbsp. fresh basil, chopped
  • 2 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • salt and pepper, to taste
  • safe dipping bread/chip/cracker

Instructions

  1. Toss chopped tomatoes with garlic and basil.
  2. Add olive oil and balsamic vinegar to tomato mixture and gently mix.
  3. Mix in salt and pepper to taste, 1-2 hours before you serve.
  4. Decide how you want to serve (see notes below for options).

Serving options, either atop or alongside:

  • Allergy-friendly bread - slice, brush with olive oil, sprinkle with salt on both sides. Place on a cookie sheet and toast in a 350 degree oven, 5 minutes per side, until crusty.

  • Banza crust wedges - prepped per box directions, until crusty
  • Eggplant rounds, roasted
